Tortellini en Brodo is one of those more than the sum of its parts kind of dishes. What it all boils down to (actually NEVER boil it!) is meat stuffed pasta in a rich mixed-meat broth. I’ve had various riffs on this dish over the years, but had never had the real deal until I went to Bologna, Italy last year. That is where the dish originated and where it has been made the same way for many generations. I took a one-day pasta making class when I was there, and now, I’m sharing what I learned with you.
