Swallow Tail Prep Session Log #2

Just received 5 dozen Beaufort oysters from HollieWood Oysters on the Island. They were delivered farm-direct by Greg, who along with his wife Hollie, own the company.  I used to deal with him at Araxi, and always looked forward to his visits. He had a casual Island way about him that I could relate to and his product is always outstanding.

This is the first time I have used their Beaufort. It is relatively large (4″) and will get baked with bed of stinging nettle and a crust preserved lemon butter and breadcrumbs. I’ve never done oyster with nettle before, but for some reason I just know it will work.
