Vegetables: A good source of raw fucking power (not to mention vitamins and minerals).
I can’t express how nice it is to work with beautiful, pristine, flavorful vegetables again. The majority of stuff we use at Araxi is from B.C., specifically nearby Pemberton. This means that right now we’re using lots and lots of roots from the North Arm Farm cellar. Sunchokes, a few different types of carrots, jade radishes, crosnes, beets, beets, beets………Not quite sure which farm the romanesco pictured above came from, but try not being blown away at how fucking god-damn magical it looks.
Romanesco is the edible flower of which species of plants? First person to give me the answer will receive a free Butter On The Endive T-shirt hand delivered to them the next time I am in the city.
And also, is there a particular vegetable that holds a soft spot in your heart for sentimental or other reasons? My answer: mother-fucking snow peas right off the vine from my mom’s garden when I was growing up. Shit. I can still taste them. Sweet green explosion of flavor. You wouldn’t dare cook them. The best answer will also receive a free t-shirt. The shirts can also be had for a small fee if anyone is interested.

Oh my fuck! That is the coolest vegetable I’ve ever seen. Thank you for showing it too me. My favorite vegetables is the chioga beet and the sungold tomato. Chioga because of the crazy look of them raw and cooked, so pink! The little orange sungold because it blew me away the first time I tasted it at Chow.

My favorite vegetable is the wild asperagas that grows along the banks of the Thompson River. Maybe served with a grilled steelhead steak from one of the beatiful fish that ran there in the spring, as the ferns poked up. The plant is also very pretty in the fall; tall, lacey and golden, with bright crimson berries.
Don’t bother the steelhead now as they are thin in the water.
I want a shirt.
Beets from Hazelmere farm. There is something in the dirt there that makes them taste better than any beet I’ve ever had! I would like to buy a shirt. Extra Large please. Great design. Who did it?
Owen, you haven’t given your own father a T-Shirt.. Mr. lightly I would have given you a lifetime supply of shirts if I was your son.
Corn from the mid east, Ottawa and Quebec, There are so many varieties and all offer something different. I don’t know of one person that doesn’t like corn. The possibilities are endless with it, juice, creamed corn, even in a dessert it works. The most inexperienced cook can cook it, its bright yellow and pairs with almost anything: fish, meat, mushrooms, asparagus, the most versatile vegetable around and of course succotash. I get exited over the corn season and all though this might cause some dissagreement, I still have yet to find west coast corn as good as east coast, Any suggestion for the best west coast corn around?
So if I win Owen i guess we can scratch the money I owe you for the shirt right…
i just want a damn t-shirt.

Oh yeah, my favorite veg. This is a very difficult task because it depends on the time of year and where I they come from and sometimes the experience sourcing them but hmmm…. It may sound boring but carrots from my moms garden. Never has a carrot tasted better than picked right form the ground rinsed and put straight in my mouth.

BEETS! Hands down are my favourite. they are soooo beautiful. Red, purple, pink, yellow, white with strips..pick your vise. Raw, roasted, boiled, pickled, pureed, steamed, juiced ….icecream, you can’t go wrong:-) When a beet is around there is no mistking it, its like “Hey here I am everyone and I rock the veggie world!”
I have been giving this a lot of thought…..so hard to choose. Would your vegetables include lettuces? If so, then my vote for favourite is arugula. It has just the right amount of peppery bite for a great BLT, can be thrown in a pasta with ease, makes for a great salad with fruit and nuts, and can make a makeshift pesto something special.
If lettuces are out….then I would go with onions and or garlic. I use them in everything. So much mellow sweet flavour cannot be beat. Onion soup anyone?

Fave veg is definitely asparagus. Cause it’s cool sounding. Many ways to make it and people always comment on how awesomely good it is. Hard to fuck that shit up too. Also does some wild shit with your body fluids….she said.
I don’t know about my favourite vegetable but the secret I learned lately from someone who grew up with an Italian family in Toronto is to add gently steamed whole brussel sprouts to pasta sauce. Spaghetti and (vegetable) meatballs!
I love the B.o.t.E. t-shirt I bought back in the summer. At first it was a bit clingy but a couple of washes and now it’s so comfy!
I’m probably too late for the t-shirt but that’s okay, I do photo transfer onto fabric. My photos are of mushrooms. Since I moved to BC in August I’ve been lucky enough to have met a forager who has shown me great spots. I’ve never eaten so many chanterelles or so many dishes made with them…they are earthy, citrusy, cleansing and grounding. So versatile. So essential.
